Extrinsic (dry) colour of high fat cocoa powders often appears to be brighter and more vivid than their low fat counterparts. There’s a certain inimitable shine to high fat powders as well. Similarly, the intrinsic (wet) colour of high fat powders appears to be lighter than low fat powders. In an application (drinking chocolate or cakes), high fat cocoa powders impart a bright refreshing brown colour to the dish.
